Simple Cornbread – Dairy-Free

Ingredients

  • 1/2 cup flour
  • 1/4 cup sugar
  • 3/4 teaspoon salt
  • 4 teaspoons baking powder
  • 1.5 cups cornmeal
  • 2 eggs
  • 1 cup water
  • Lard

Directions

  1. Preheat oven to 425°.
  2. Combine all dry ingredients in a mixing bowl.
  3. Add eggs and water to dry ingredients and thoroughly mix.
  4. Optional – Add 1 cup pork cracklings to batter.
  5. Grease cast iron pan with lard and fill with batter.
  6. Bake for 20-25 minutes.

    I know you’re house is dairy-free due to anaphylactic allergies – since that isn’t an issue in my house, would I be able to substitute butter for the lard? No lard on hand and I’m feeling too lazy to get some haha.
