Ingredients
- 1/2 cup flour
- 1/4 cup sugar
- 3/4 teaspoon salt
- 4 teaspoons baking powder
- 1.5 cups cornmeal
- 2 eggs
- 1 cup water
- Lard
Directions
- Preheat oven to 425°.
- Combine all dry ingredients in a mixing bowl.
- Add eggs and water to dry ingredients and thoroughly mix.
- Optional – Add 1 cup pork cracklings to batter.
- Grease cast iron pan with lard and fill with batter.
- Bake for 20-25 minutes.

I know you’re house is dairy-free due to anaphylactic allergies – since that isn’t an issue in my house, would I be able to substitute butter for the lard? No lard on hand and I’m feeling too lazy to get some haha.
