Mix 3 cups masa harina with 2 cups of warm water and then let it sit for about ten minutes to absorb.
Roll about 2 tablespoons of the wet masa into a ball and flatten it into a circle. We use a cast iron tortilla press to make them, but you can easily use a heavy pan to flatten the dough. Place the circle of flattened masa dough on a hot cast iron pan. Do not oil the pan. Flip the dough after a minute and let the other side cook. You now have a tortilla.
Slice your tortilla into fourths or sixths, depending on preference.
Drop your tortilla pieces into a pan of hot oil, allowing them to fry evenly on each side until crispy.
Remove the fried tortilla chips from the oil and place it on a paper towel-lined plate and sprinkle with salt. Allow the chips to cool and the grease to drain.
