Dairy-free Pumpkin Muffins

Servings: 24 muffins

Ingredients
  

  • 3 cups all purpose flour
  • 4 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp clove
  • 1 tsp salt
  • 2 cups sugar
  • 2 cups pureed pumpkin
  • 4 eggs
  • 1 cup olive oil

Method
 

  1. Mix all of the dry ingredients.
  2. Add eggs, pumpkin, and oil to the dry ingredients and mix. (Optional - add 1 cup chocolate chips or walnuts)
  3. Scoop batter into muffin cups and bake on 350° for 20 minutes.
  4. Enjoy!

Notes

You can also use this recipe to make two loaves of pumpkin bread. Bake for 45 minutes.
